Notes from our testing
Cream soda plus butterscotch syrup is already 14 Brix — cut it with milk, not more syrup.
Most butterbeer recipes are built for a warm or a soft-serve version and are far too sweet for a slush. Cream soda alone is around 12 Brix and butterscotch syrup is near 60, so a typical two-ounce pour puts the batch over 14 and it never firms up — it dispenses as a thick, sticky stream.
Cut with whole milk rather than water. Milk brings the Brix down while adding body and the dairy note that butterbeer is supposed to have, so you fix the chemistry and improve the flavour with the same move. We use about 8 oz of milk to 20 oz of cream soda plus 1 oz of butterscotch, landing near 11.5 Brix.
A pinch of salt in the butterscotch component makes a real difference. Frozen sweet drinks read as flat and one-note, and salt is what turns generic butterscotch into something that tastes deliberately made.
The whipped topping is not optional if you want it to look right, and it should go on after dispensing — anything aerated in the chamber gets destroyed by the auger.
