Notes from our testing
Full-sugar Coke is about 10.6 Brix — perfect alone, unfixable when you swap to Diet.
Standard Coca-Cola measures right around 10.6 Brix, which puts it just inside the low end of the slush window without any help. Poured flat into the chamber with nothing added, it freezes into a clean cola slush in about forty-five minutes. It is the single easiest thing you can put in the machine.
The failures all come from modification. Add a shot of rum and you have dropped the Brix while raising the ABV, and a 2 oz pour across a small batch is enough to make it soft. If you want a spiked cola slush, add sugar alongside the spirit — about a half ounce of syrup per shot keeps the balance.
Diet Coke and Coke Zero will not freeze into slush at all. Aspartame and acesulfame K are hundreds of times sweeter than sugar by weight, so the actual dissolved mass in the bottle is close to zero and the liquid behaves like water: it goes to a solid block. This is the most common complaint we see and there is no way around it except adding a bulk sweetener like allulose.
Let it go flat. Carbonation escapes as the auger works, and a fresh 2-litre bottle poured fast will foam past the fill line before you get the lid on.
