Notes from our testing

Grenadine is around 60 Brix — one ounce is the whole sugar budget for the batch.

Grenadine is closer to a syrup than a mixer: real pomegranate grenadine runs near 60 Brix and the supermarket red stuff is not far off. One ounce in a 64 oz batch contributes about as much sugar as a full ounce and a half of simple syrup, and people pour it by eye because it is a colour ingredient.

Build the ginger ale or lemon-lime soda base first — that is already around 10 Brix — then add grenadine sparingly and re-check. Roughly three quarters of an ounce for a full chamber, which will look like less colour than you expect until it freezes and the ice scatters the light into a brighter pink.

This is the drink kids ask for, so it is worth getting the texture right rather than just the flavour. Overshoot the sugar past 14 Brix and it never firms up; you end up with cold red juice that dispenses in a stream instead of a swirl, and that is disappointing in a way adults will forgive and children will not.

Maraschino cherries go in the glass. Their syrup is even sweeter than grenadine and a jar's worth of liquid will push the batch out of range on its own.
