- Fresh Lime Juice30 ml

Notes from our testing
Hard seltzer is 5% ABV and near-zero sugar — it needs sweetening, not dilution.
Hard seltzer looks like the perfect slushie base because the alcohol is already low, and then it freezes into a block. The reason is the same as diet soda: White Claw has under 2 g of sugar per can, so there is almost nothing in solution to depress the freezing point beyond the modest contribution of 5% alcohol.
Two cans plus about 3 oz of black cherry syrup and an ounce of lime brings a batch to roughly 11 Brix while keeping the ABV near 4%. It is one of the lowest-alcohol drinks in the library and it slushes beautifully once the sugar is there.
If you want it to stay low-calorie, allulose does the same structural job as the syrup — around 110 g per batch — with a cleaner flavour than the fruit syrups, though you then need to add the cherry character separately.
Do not add vodka to fix the texture. Raising the alcohol does lower the freezing point, but seltzer has so little sugar that you would need enough vodka to push past the window before the texture improved, and it would stop tasting like a seltzer entirely.
