Notes from our testing

Chamoy is salty as well as sweet, and the salt keeps the batch softer than the Brix suggests.

Chamoy is doing three things at once: it is sweet, it is acidic, and it is genuinely salty. That last one is what catches people out, because sodium depresses the freezing point independently of sugar, so a mangonada calculated to a normal 12 Brix comes out noticeably softer than a plain mango slush at the same number.

Build it a point drier. We target around 11 Brix from the mango and a small amount of syrup, then add chamoy — about 1.5 oz per batch — knowing that it will bring both sugar and salt. The result holds a swirl instead of slumping in the glass.

Layer the chamoy rather than mixing all of it in. Half in the batch for flavour, half drizzled down the inside of the glass before dispensing, which is how it is served from a paletería and gives you the streaked look that is half the appeal.

Tajín on the rim, and a tamarind straw if you can find one. Neither affects the freeze and both are what make it read as a mangonada rather than a mango slush with hot sauce in it.
